I am from Canada myself and was previously living in Cork City. I was on a year working visa but wanted to extend it. I went to the Garda station in the city and showed that I had a place to live and enough funds to support myself and they extended it for another 6 months no problem. I'd say that if you can show the same things for your mother it should be ok, but part of me thinks that it really depends on the person working that day too. Good luck.
