Great point. When there were no summer jobs in Ireland, my daughter found one in the Netherlands. However, in the Netherlands, and perhaps elsewhere in the EU, you need to provide a birth certificate with an Apostile stamp. This is an extra layer of red tape above and beyond a certified copy. It's easier to organise while still in the US and would be a good idea for anyone who might end up working on the continent.
