Apartment rental is not subject to any sort of government paperwork. So, you don't have to supply any documentation other than your Euros to landlords.
But, you are indeed subject to residency and visa requirements. You deal with this through the government and not apartment owners.
If you sign a 6 month lease and the state tosses you out after 3 months, tough, and you still owe the landlord and will probably lose your deposit.
