Since your husband is already a citizen, your children are automatically citizens as well. I don't think there's any urgency in doing this before your child is born. As for getting them Irish passports, it's not a problem..they will just need your husband's birth certificate/marriage certificates/any other pertinent info etc.
If you want to do it in the US..contact the Irish embassy for the forms, otherwise you can pick up the forms at the post offices in Ireland once you are living there. I don't think you need to register them or anything..at least I never had to do that for my children (only me, being a US citizen!)
