Most large businesses and charities are based in Dublin which is the economic, media and political giant in the country. The overseas NGO charities are all based in Dublin because that's where they have access to the media, the politicians and the money.
Cork charities are basically local organizations raising money for local needs. That means they're small and have small budgets. Any work you do for them would certainly be appreciated, but they're mostly unlikely to be paying you the money you need for a green card.
Contact some and see. http://www.qype.ie/ie025-cork/tag/charity is a page I found on Google with a few links to some Cork charities. Contact some and see who they recommend you should talk to.
Good luck. It's a laudable ambition and the heavens may shine on you. But, be aware that Ireland is going through the worst recession of any industrialized nation on the planet and unemployment is growing fast.
