Gorgon was an unbelievably strong telepathic or mind reading guy that was very fast and had excellent martial arts skills that were at least comparable to Wolverine's. In addition, he could literally turn a person to stone with one look and seemed to be able to recover from just about any wound. Remember what Elektra and Wolverine did to him and remember how unfazed by it he was? Anyway,of course he beat Wolverine! What was interesting to note is that when he was unable to read Wolverine's mind he was unable to know what he was gonna do before he did it and was losing to both Wolverine and Elektra. The key to Gorgon being so good was his telepathy. Without it he could be fought but not necessarily killed but with it he was unbelievable. Thank goodness Wolverine was able to figure out how to beat the guy. Never underestimate the power of cunning.
