You can definitely sell any accomplishment in which you had involvement, including assisting and team teaching.
You can also sell your versatility by showcasing each position you had within the organization, and highlighting your accomplishments in each role (does not need to be UIL).
Beyond that, I would need to take a look at your individual experience and accomplishments to better understand your situation and how best to market your experience.
