I recommend the following:
The Smoke (BBQ joint, other side of 37 from the CC)
Cured @ Pearl (smoked meat, sandwiches, etc, on north side of downtown)
Sam's Burger Joint (up Broadway near Cured)
Casa Azul (South American, not just Mexican)
Carmelita's (up Broadway a bit, Mexican)
Guillermo's (off St. Mary's, Italian/Pizza)
Mi Tierra (Mexican, western side of downtown near I-10)
If you get a half mile or so away from the Riverwalk, the wait times will cut to a quarter what they are on the 'Walk. You also won't need to deal with the giant clog of humanity that descends upon the walkways every mealtime. I haven't eaten (except by necessity) in the CC, the mall, or on the 'Walk in a couple years, and I don't miss it. You can still make it in time for concerts, too, since there is virtually no wait at most of these places.
