I will try to address some of your questions. First, I am feeding Bayley Canidae. I have been for a long time. I was only feeding her one cup twice a day, but now I'm feeding her 1 and a half cups twice a day and she already seems like she's gaining weight.
I also added some more snacks during the day (more healthy dog bones). She LOVES food still so we don't have a problem there. I am also adding some water to her food to make it softer before giving it to her. She does drink a good amount of water during the day, though.
I am concerned, Kathy, about the "sunken" in thing you said, as our stories do sound similar. That's exactly how I would say she looks - "sunken" in. Her gagging seems to have lessened since I have been giving her moistened food as of late - although that could be coincidence.
Frankly, we didn't want to do any expensive testing because she is 11 and we aren't going to do anything anyway (I know that sounds harsh). I would never do anything to make her uncomfortable. But maybe if I knew she was suffering, I could prepare for what's to come and make her more comfortable.
