Organic is nice, but certainly not necessary. My guys get grocery store meat for probably 80% of what they eat and they're doing just fine. If I had a dog with a serious health issue that demanded cleaner food, then I'd look for organic, but if you can't afford or get organic, don't let that stop you from using "other" food.
And I've fed pork -- large quantities of it, in fact -- for most of the last 8 years. No troubles here. The connection between a higher fat diet and pancreatitis is strictly an individual dog thing. And in dogs prone to pancreatitis, ANY higher fat diet is going to set them off. It's not a 1:1 link between pork as a "bad" meat and pancreatitis.
My dogs like all things pork, but especially pork heart and pork tongue. I think it's worth working into the meal rotation.
