I had a dog like this in the past. A 100 lb alpha male - smartest dog I've ever owned. When he did this sort of thing I would either deliberately take whatever it was he was guarding and then give it back (to show him the pecking order) or in extreme cases I'd pin him, look him straight in the eye, and growl back.
