330-425 olds intake gaskets

I currently am working on some Olds engines both 330 and 425, When should valley pan intake gaskets be used? The parts store had 2 listings.
I bought both as I haven't pulled the intakes off yet.
1 set had 2 metal gaskets (1) for each head, the other had a (1) piece metal pan.

Any help is appreciated.
