Angela Oakley: Ski toring in Scotland. Cicerone . Easy enough to get a hold of.
My favourite though is On Ski in the Cairngorms by V A Firsoff (Chambers 1965_ well out of print). It's good because the routes described tend to be reliable , although they also expect a good walk, but hey thats what a bike is for.
