There's Malcolm Slesser's "Scottish Mountains on Ski" going back to 1970, when we used to get real winters and there were ambitions for a regular Scottish Haute Route. I see it's available on ABEBooks.com at a price, but you might find it in libraries. I suspect more recent guides have been published, but that's the only one I know of off-hand. Alas, the lack of reliable snow in the past couple of decades has probably reduced the market for guides to lower-level ski routes ...
