I can understand your feelings about replanting palms that have died. If you spend a long time working hard on your landscape only to watch it die due to weather conditions that will always be out of your control, I think anyone would start to change their tune to some extent.
I think that many of us catch a palm "bug" that is often strong and can lead us to take risks. A few mild winters feed the bug, before a reality-check winter comes along.
As others have said, I am trying more and more to plant things that work here. Sabal minors and needle palms can be included in that, almost any other palm is just on borrowed time. I still love palms and I am happy to finally be able to plant some in the ground now that I've built my own home and have lots of room, but I am spending more time on growing food these days than I used to.
