Question for Southern gardeners

Living in Florida for the past 4+ months without any gardening is making me bored. One of my friends places I stay in Orlando has a horrible landscape. I asked her if she would let me play in her garden, and she was thrilled. Ultimately I have a few overgrown houseplants (Rhapis hybrid, ti plants, and a Triangle palm) I want to plant in her yard, but in the meantime, I found a wholesale/retail nursery in Lakeland selling 7 gallon Gardenias (Miami Supreme) and Jasmines (unknown) for $7 each.
My question is, Miami Supreme says it grown 5-10' tall and 5-8' wide. What is the realistic height to see in 9b Orlando? And how fast?
