says to ____Panthera sincerus___: *It is easier to grill the pieces on skewers, then trying to flip each little piece. The meat is very lean, not dripping into the coals to cause flames. But the idea is to cook the meat slowly, so I close the kettle top and let the skewers roast and smoke.*
