Hi Tracy,
TIME and PATIENCE are the key to get your mustang to trust you. Just spending time near him and talking to him in a calm voice is a good start. Of course, your body language says so much more than your words will. Slow movements and no direct eye contact are important. If he is so mistrusting of humans is may take a while to get close enough to get a halter and lead rope on him but you want to show him that you mean him no harm so it is going to take a while to get this accomplished.
I also have adopted two mustangs but they were weanlings and I had a halter and lead rope put on them before I brought them home. I still couldn't get near them and used the Pendulum Method to establish trust and contact with them.
I wish you the best with your mustang. Stay safe and stay patient with him because he needs to learn that you can be trusted.
